Chateau de Pennautier 400th

75cl • AOP Cabardès

GRAPE VARIETIES • Grenache 40%, Syrah 25%, Cabernet Franc 20%, Malbec 15%

TERROIR • These plots, located on the heights of Château de Pennautier, were already cultivated in the 17th century when its wines were served at Versailles, at an altitude between 320 and 340 m. They were reclaimed from the garrigue in 1960 to plant Languedoc Grenache, Mediterranean Syrah, as well as Atlantic Cabernet Franc and Malbec. The soil, composed of fine limestone over deeper clay, allows deep rooting and maintains consistent humidity during dry periods.

TASTING NOTES • Intense fruity nose of fresh fruit, with a balanced palate offering fresh notes of red fruits, raspberry, and redcurrant. Lovely texture, combining finesse and amplitude.

VINIFICATION • Manual harvest and sorting from low-yield vineyards. Long fermentation of 24 to 28 days. Partial ageing for 12 months in oak barrels and demi-muids previously used three times (Taransaud, Orion – for 40% of the volumes), in order to preserve the balance of this complex wine, combining aromatic finesse with Mediterranean spice flavours.
