Château de Ciffre BIO · Terroirs d’Altitude · 2021 Saint Chinian

75cl • AOP Saint Chinian

GRAPE VARIETIES • Syrah, Grenache, Old Vines

TERROIR • The schist terroirs cling to the foothills of the Pic de la Coquillade, which rises to 650 m. The high-altitude terroirs benefit from cool nights that allow gentle maturation and the most elegant expression of aromas. The soils are composed of limestone and schist.

TASTING NOTES • Deep garnet color. Great aromatic intensity, raspberry jam. On the palate, red fruits dominate. Silky and velvety tannins, bringing additional intensity and length.

Bernard Burtschy: “The color is still young and vibrant, with aromas of violet and a slight touch of oak. The wine is fresh and slightly taut, with a slight tightening on the palate. It emphasizes precision and purity, offering lovely raspberry notes on the finish. It will be ready to enjoy soon.”

WINEMAKING • Harvested by parcel, separately, at the aromatic peak of the grapes. Traditional winemaking respectful of the fruit with gentle extraction. Partial ageing in barrels (50% new oak).
